Sweet Pepper Turkey Nachos

  • 1 1lb bag of sweet mini bell peppers
  • Half pound ground turkey
  • 1/2 cup black beans drained and rinsed
  • 1 1/2 teaspoons of spicy taco seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon crushed red pepper
  • 1/2 cup shredded cheese of your choice
  • Top-tionals: salsa, jalapeños, sour cream & avocado

Instructions

  1. Pre-heat oven to 400 degrees Fahrenheit
  2. Heat medium skillet, spray with cooking spray. Add ground turkey.
  3. Mix taco seasoning, garlic powder and crushed red pepper together. Sprinkle on raw side of ground turkey
  4. As turkey begins to cook, use utensil to break up into small pieces. Flip turkey, continue cooking until lightly browned
  5. Once turkey is done, add black beans, mix. Remove from heat, set aside
  6. Cut off stems of each mini sweet pepper. Slice peppers length wise and place skin side down on pre-sprayed cooking sheet
  7. Spoon spicy-turkey-bean mixture onto each pepper
  8. When ready to serve, generously sprinkle shredded cheese over entire pan covering all nachos. Cook for total of 10 minutes or until cheese is browned
  9. Plate & serve with toptionals

Sweet Potato Crusted Quiche

  • 1 medium sweet potatoe (8 oz if you want to be exact)
  • 1/4 pound cooked ground turkey
  • 1 cup shaved brussel sprouts
  • 1/4 cup chopped onion
  • 1/2 cup almond milk
  • Pinch of salt & pepper
  • 4 eggs
  • 2 egg whites (about 1/4 cup)
  • 1.5 ounces shredded cheddar
  • Optional: crushed red pepper

You will also need a circular 9" ovensafe dish

Instructions

  1. Pre-heat oven to 350 degrees
  2. Spray pie dish with cooking spray. Evenly slice sweet potato into 1/8 inch thick slices. I used a mandolin slicer 
  3. Evenly lay slices of sweet potatoes and cover bottom of pan. Once bottom is done, cut remaining slices in half, place flat side down to create the back of your crust
  4. Pop in oven for 20 minutes. 
  5. While baking, spray non stick skillet: Add raw onions. After three minutes, add shaved brussel sprouts, and one tablespoon of water. Cover. (This step keeps calorie count low, no oil). Once onion & brussels sprouts are cooked, remove from heat. Set aside uncovered. 
  6. Spray another small skillet and add ground turkey.  Season with salt and pepper for taste & keep on heat until cooked all the way through (about 5-7 minutes).
  7. In side bowl add remaining ingredients, whisk until yolks are mixed in completely. 
  8. Remove pan from oven, increase heat to 375 degrees. 
  9. While heating, lay ground turkey, brussel sprouts, & onion mixture flatly across bottom of sweet potatoe crust. Next, pour egg mixtures on top. 
  10. Top with shredded cheddar. 
  11. Bake for 40 minutes

Mom's Chocolate Trifle

  • 1 box of chocolate cake mix (I used Ghirardelli's Double Chocolate Cake mix because, why not?)
  • 1 box instant chocolate pudding
  • 1 container light Cool Whip (tip: Okay, so embarrassingly enough, I could NOT find this anywhere at the grocery store.  When I finally asked, it's found in the freezer section.  Just trying to save you the embarrassment I endured!)
  • 1 bag crushed heath bar

Instructions (YES, its THIS easy)

  1. Prepare cake as instructed on box.  Let cool for 20 minutes.
  2. Prepare pudding as instructed on box.  Place in fridge to cool.
  3. Defrost Cool Whip (night before: in fridge.  for immediate: on counter, 30 minutes)
  4. Take container of choice (I used a MASSIVE martini glass), and begin layering the four ingredients. Always start with cake on the bottom.  Cut to fit container shape.  Each cake piece should be about 1" in thickness
  1. Cake, pudding, cool whip, heath bar.
  2. Cake, pudding, cool whip, heath bar.
  3. Cake, pudding, cool whip, heath bar.

Okay, okay, you get it!  Viola!  Done.
