INGREDIENTS:
- 1 cup apple cider vinegar
- ½ cup brown sugar
- 1 onion, diced
- ⅓ cup dried figs (or dates), chopped
- 3 cups sugar pumpkin (or butternut squash), peeled and ½” dice
- 1 tsp curry powder
- ½ tsp mustard powder
- ¼ tsp ground ginger
- ¼ tsp nutmeg
- 3 cardamom pods, optional
- 1 cinnamon stick

PREPARATION:
- Combine all ingredients in a medium pot and simmer for 20 minutes.
- Add a little more water (1/4cup at a time) if necessary. Pumpkin should be tender but still have a little bite.
