Food Truck Friday: An Incredible Porchetta That Takes Days to Make

Pennypacker's has a savory dish you're unlikely to find on any other food truck in the Boston area. Pennypacker's famous porchetta.

Sous Chef Andre Barboza said, "We’re a total scratch kitchen. Everything is made in house."

He said the truck started after founder Ryan McGuire took a trip to Italy, tried porchetta and "cooked his own recipe out of his house for a couple of years."

The porchetta, an Italian, skin-on-roast pork, is the signature dish on the truck and takes several days to marinate, season and cook.

Barboza said, "I think people love it because your first experience with it, it is an amazing sandwich. It is great. People seek it out, they love it."

Other dishes, including a jerk vegetable sandwich, a shaved lamb sandwich and gazpacho, are often seasonal.

A restaurant can be found at 514C Medford St. at Magoun Square in Somerville.

Monday - Franklin at Congress (FiDi)  (11:30am-2pm)

Tuesday - 3rd Street at Binney Street (Kendall Sq.) (11:30am-2pm)

Wednesday - Dewey Square    (11:30am-2pm)

Thursday - Congress at Atlantic (Greenway)   (11:30am-2pm)

Friday - Milk Street at Kilby St. (FiDi)    (11:30am-2pm)
