Food Truck Friday: Rocker Brings Boston Flame-Cooked Pizza

The crew on the Stoked Wood Fired Pizza food truck has taken on a tough challenge. They use an actual wood oven on their truck to cook Boston a great pizza.

Co-Owner Scott Riebling, originally from Pennsylvania, kicked off his dream when he was touring with his Boston-based band Letters for Cleo.

Missing the pizza he grew up with, Reibling made his own for his band mates, soon drawing attention from aspiring pizza shops around the country.

“At band practice I started making pizzas and next thing I got so into it that I started being hired as a consultant for other pizzerias,” Reibling said.

“And they would fly me around the country to teach them how to make dough, figure out what oven worked best for what they were trying to do and what mixer worked best. And pretty soon I started seeing those pizzerias seeing some success. And I thought, ‘Hey, maybe it’s time for me.’”

Reibling now works on the truck with co-owner Toirm Miller, whose strong background in restaurant operations since the age of 14 helped get Stoked onto the road.

“It’s a delicate pizza with very high end ingredients,” said Reibling. We spare no expense on the cheese, the tomato, the flour. We put a lot of work into the dough-making process. We feel like we provide a great pizza.”

In addition to the truck, Stoked has a restaurant located at 1632 Beacon St. in Brookline. 

Reibling said there are definitely plans to expand the restaurant. 

“We opened our first restaurant almost exactly a year ago. We’re at the one year and one month anniversary right now. We love the restaurant. The restaurant is really fun. The truck is fun in its own way, but the restaurant’s great because everyone is, you know, right there, and I see the reaction when they eat the food. That really is what makes me tick and keeps me going. And I want another restaurant. We’re actually looking for another location right now.”
