Hub Cooking Club: Chickpea Fries
The Hub Today’s Anna Rossi makes delicious chickpea fries with Chef Paul Turano from Cook restaurants.
Chickpea Fries
Yields: ½ sheet pan
Ingredients:
4 Quarts Water
1 Tbsp Cumin
1 Tsp Aleppo
½ Cup EVOO
4 Tbsp Salt
1 Tsp Pepper
3 Tbsp Garlic Powder
1 Tsp Rosemary
2 ½ Quarts Chickpea Flour
Directions:
In a rondeau, combine all ingredients except chickpea flour.
Whisk in chickpea flour gradually to prevent lumps. Cook over low heat, stirring constantly for about 10 minutes. Adjust seasoning.
Pour into a parchment lined half sheet pan. Cool and put in refrigerator for 30-40 minutes
Cut into 3 x 32 and then cut each stick in half.
Using a fryer or a pot of oil bring temperature to 350 degrees and add fries for 3-4 minutes until golden brown
Serve fries on a plate with a side of feta dipping spread.
Feta Dipping Spread
Ingredients:
1 Quart Boursin
1 Quart Feta Cheese
1 Cup EVOO
Direction:
Blend well and serve.
