Roxy's Gourmet Grilled Cheese Owner James DiSabatino never planned on going into the food truck business, but eventually built up his brand with massive success.
"We make really delicious grilled cheese sandwiches, hand-cut truffle fries and delicious lemonade for a hot day like today," DiSabatino said.
DiSabatino opened Roxy's in 2011 after graduating from Emerson College. Originally looking for marketing jobs, he decided to open a truck as an experiment. Since then they've gotten another truck and a brick and mortar store has opened in Cambridge.
The truck also found success on Food Network's "The Great Food Truck Race," after just two months of being in business.
"It was wild to say the least," said DiSabatino. "It was very competitive at the time and we were competing against trucks that were around for five or six years at the time, so we had a lot of learning to do."
He added, "I like to think that going on that show kind of gave us a master's degree in food trucks because we were actually open for two months before we left for the show."
