How to Create Low-Calorie Summer Cocktails

Diana Kuen, vice president of Blue Ice Vodka shares her recipes for healthy cocktails that are low calorie and taste great.

Her cucumber cocktail contains fresh pressed cucumber, apple juice, a little bit of mint and 1.5 ounces of potato vodka. 

Very few vodkas are made from potatoes as it's expensive to make. The crops don't yield as much as things like corn or wheat. The nice thing about potato vodka is it creates a sweetness & creaminess from the potato. 

Blue Ice Vodka is very smooth. It doesn't taste like gasoline or burn like other alcohols.

The watermelon cocktail has just three ingredients: basil, fresh watermelon & a little bit of vodka. 

One tip Kuen shared is that herbs are one of the easiest way to add flavor without adding calories. 

For her favorite "green drink martini," blend fresh pressed spinach and pineapple with a little vodka. No need for exact measurements. You can just eyeball it. If you wanted to sweeten it up, you can add a little agave or honey.
